Hot, Sweet & Sour Chicken

  • ¾ cups flour

  • ¼ cup corn starch

  • 1 medium red bell pepper

  • 1 medium green bell pepper

  • ½ cup Jabba’s Hot and Sweet BBQ & Dipping Sauce

  • 4 large chicken breasts (cut into chunks)

  • 1 ¼ cups water

  • 1 tsp paprika

  • 4 cups cooked rice

  • 1 tsp salt

  • 1 small onion (chopped)

  • 1 can of chunk pineapple (save the juice)



Mix flour, corn starch, salt, paprika, red pepper and green pepper, then add water. Mix batter thoroughly (adding water as needed). Pour batter mix over chicken in small batches until done. Combine Jabba’s Hot and Sweet BBQ & Dipping Sauce with pineapple juice, onions, pineapple and peppers into a large pan (use a wok if available). Reduce sauce over medium heat for about 15 minutes until the sauce has thickened. Turn off heat then add chicken and toss until all pieces are coated. Serve over rice and enjoy.
